Adventures with food

Tonight on the dinner menu was Hoppin’ John. A varied mixture of sweet yellow onion, crisp green pepper, red succulent pepper, earthy black eyed pea’s, splash of jalapeno green tabiasco sauce, juicy turkey bacon & fluffy white rice. My nose was overwhelmed with the smell of good ol’ southern cooking. The finished product was simple yet complex. Reminded me of why I love to cook so much. The flavor was tangy yet sweetly spicy and creamy at the same time. Very good!
Recipe to follow:
1 cup of chopped yellow onion
1 chopped sweet red pepper
1 chopped green pepper
1 cup of chopped turkey bacon
2tbsp. of olive oil
2-3 splashes of jalapeno tabiasco sauce.
2 cans of drained black eyed peas
3 cups of cooked white rice
Saute the above ingredients until tender.
Serve over 3 cups of cooked rice.
If desired, top with salsa and sour cream.
