I steamed up the kitchen tonight with a dish called, lemon shrimp with parmigiana rice. This particular recipe had a very refreshingly clean taste to it. The entire contents of this elegant dish brought together the wow factor in the flavor. The rice had a hint of zesty lemon and butter. A few parsley leaves added the clean refreshing taste as mentioned earlier. One could eat this dish again and again without feeling guilty because its very light and satisfying.
Recipe to follow:
2 cups of chicken broth
2 cups of uncooked rice
1 pound uncooked medium shrimp, peeled and deveined
1/2 cup of chopped green onions
2 tablespoons of butter
2 tablespoons olive oil
2 teaspoons of minced garlic
3 tablespoons of lemon juice
1/2 tablespoon of lemon zest
1/4 teaspoon pepper
1/2 cup of grated parmigiana cheese
2 tablespoons of minced fresh parsley
In a small saucepan,bring broth to boil. Stir in the rice;cover and remove from the heat. Let stand for 5 minutes.
Meanwhile,in a large skillet,cook shrimp and onions in butter and oil over medium heat for 4-5 minutes.
Add garlic and cook 1 minute longer or until garlic is tender and shrimp turn pink. Stir in lemon juice, zest and pepper.
Stir cheese and parsley into rice; serve with shrimp.
